Savory Oatmeal Breakfast Bowl

Oatmeal is one of those power foods that I wish I ate more of. It has a lot of fiber for a healthy GI tract and it has been linked to maintaining a healthy cholesterol level, plus it helps keep you full much longer than a standard breakfast.
But, some of the most popular ways to prepare oatmeal include adding a lot of sugar, increasing the calories without adding much nutrition. I’m more of a savory breakfast person because I find that too many simple sugars in the morning leaves me feeling kind of groggy for the rest of the day.
I forget exactly how and when I got the idea to make a savory oatmeal dish, but since then it has been a regular in my breakfast rotation! It’s quick , filling, nutritious, and easily customized based on your tastes and what is in your refrigerator.
Ingredients
1/2 cup oatmeal
1 handful baby spinach
5-10 grape tomatoes
2 eggs, fried over-easy
A pinch of shredded cheddar cheese
Optional Toppings:
Salt, pepper, hot sauce
Directions
1. Chop the spinach and quarter the grape tomatoes.
2. Prepare the oatmeal according to package directions, stirring in the chopped spinach towards the end.
3. While the oatmeal is setting, fry your eggs. I prefer them to have a runny yolk to mix into the oatmeal, but you can experiment or try your favorite method of preparation!
4. Once the eggs are done, mix all ingredients together, add toppings, and enjoy!
